Who is strawberry’s best friend?

Whipped cream is the answer

Heavy whipping cream itself is not a person to make real friends with, obviously. Still, the cream, especially when whipped, becomes an entity that, in my opinion, brings berries to life. Especially strawberries. It gives them a higher dimension, takes their soul and makes it available for you to taste. Strawberries alone are an impressive type of fruit, yet, combined with whipped cream, they turn into a dessert which offers an experience that gets quite spiritual. 😉

Have you tried this combination yet?

I’m not talking about strawberries with whipped cream here. What enhances the whole thing way further is balsamic vinegar! Have you tried such a combination yet? Creamy, sweet, and sour. An incredible mix of flavors, too! Balsamic vinegar is usually full of sugar, as well, so you might want to dose it carefully.

Things could hardly get simpler

Particularly in this time of the year when berries should be available almost everywhere. This dessert offers a very quick and simple refreshment for late spring and early summer warmth.

Do read the recipe because I am not talking about just mixing strawberries with plain whipped cream. It gets better. On the other hand, if you need to hurry, replace the whipped cream with plain mascarpone (enhanced with vanilla) and just add balsamic vinegar.

Instructions
  1. Put the gelatine in a small microwave-safe dish. Soak it in 3 tbsp. cold water (or prepare according to instructions on the envelope). Let sit for 5 minutes. Microwave on medium-high for a minute (the gelatine must dissolve completely) and let it cool down a bit.

  2. Whip the whipping cream in a large bowl while the gelatine is cooling down. When firm enough (but not too firm let alone buttery!), add in cream cheese, erythritol and vanilla extract. Mix on medium high. While mixing, slowly add in the dissolved gelatine and mix thoroughly.

  4. Chop the strawberries. Take 6 glasses or any kind of dishes you like, and assemble. Put strawberry cream on the bottom of each glass, add some chopped strawberries, top with white cream mixture, then top with more strawberries. Cover with foil and refrigerate for at least 30 minutes. The longer, the better.
