Low-Carb Lemon Popsicles

Ingredients

  • 1 tablespoon sweetener to taste
  • 2 lemons
  • 1 cup water

Instructions

  • Take one-third of lemon juice and two-thirds of water. When squeezing the lemons, make sure to pour the juice through a strainer to get rid of the seeds.
  • Add sweetener to your taste.
  • Pour the liquid into popsicle molds and place in the freezer.
  • When ready, place the bottom half of the mold in warm water for a couple of seconds to get the popsicles out of the mold.
  • Enjoy

Notes

In the traditional recipe, you should heat the water and sugar until sugar dissolves. But this is not the case when it comes to keto-friendly sweeteners. Erythritol, for example, does not dissolve easily. I would use liquid stevia and (or) a powdered sweetener in this recipe.
