It is December 8 while I write this text which means that the season of baking has been here for a while but is probably about to reach its peak in the following 2 to 3 weeks. There are all sorts of recipes around that require lots of complexity and decoration to bring the Christmas spirit alive. If you are fed up with that and want something straightforward, quick and simple, but still delicious, I do not blame you. Keto Chocolate Chip Cookies are the thing for you this Christmas season!

You are only human and deserve a cookie recipe that only takes 30 minutes and few ingredients. Even I, a scientist who enjoys complex solutions, love being able sometimes just to throw things together quickly. Giving myself a break is a huge reward. We should stop complicating things, at least during holidays, and go with the flow. On the other hand, if you still feel like decorating, I have a Gingerbread Cookies recipe for you. I'm making the Gingerbread cookies this Christmas to hand on our Christmas tree.

Keto Chocolate Chip Cookies are the simplest to make

Anyhow, keto chocolate chip cookies is one of the recipes I had been thinking about for ages. Why did it take me like two years to make it happen? Because they are too simple to make!

Can you believe it? Just like keto pancakes that have taken me months to post a recipe for. Too simple to bother!

Yet, something everybody wants to enjoy on a widespread basis. Before I came out with one of the simple pancake recipe, I had to complicate with Au Gratin Pancakes. By the way, the latter are heavenly, and I highly encourage you to try the recipe!

Bringing out molasses flavor in keto desserts

Returning to the Keto Chocolate Chip Cookies, it is a classic! The version I'm posting requires using almond flour which gives the cookies flavor that is way more awesome than plain wheat flour. The ingredient I also love in the recipe is gold IMO syrup. It is unusual to have it at hand, albeit I do recommend it! If you don't have it, you can use your favorite sweetener of choice and still make the cookies. But the gold IMO syrup gives kind of the molasses flavor that fits in perfectly.

Some of you might be against using IMO syrup for all kinds of reasons. I agree with some of them: It is a highly processed high-fiber syrup that we don't want to consume a lot if we strive for health. Some people claim it raises their insulin levels. With all the reasons against it in mind, I still don't mind using it in Christmas baked goods. It is such a seasonal thing that, compared to tons of highly processed desserts a lot of people eat these days, using a bit of IMO syrup is not something we should extensively worry about.

How to make Keto Chocolate Chip Cookies

  • Preheat the oven to 375°F (190°C).
  • Using an electric mixer, mix softened butter, low-carb sweetener, and gold IMO syrup. Alternatively, use low-carb sweetener instead of the syrup.
  • Add egg and vanilla extract, and combine.
  • Sift the almond flour, coconut flour, salt, and baking soda into the butter mixture.
  • Using a rubber spatula, combine the mixture forming a uniform batter.
  • At the very end, stir in chocolate chips.
  • Form and place 30 disks onto the pre-prepared baking pans lined with parchment paper.
  • Bake for 10-12 minutes. Let the Keto Chocolate Chips Cookies cool down a bit before placing them on a cooling rack. They will get firmer when cooled.

NOTE: In step 5, try not to stir the batter for too long to prevent it from becoming too sticky.

Ingredients
 
 

  • 10 tablespoon softened butter - 5 oz.
  • 6 tablespoon Sukrin gold IMO syrup - (3.5 oz.) or ¼ cup sweetener
  • 3.5 oz sweetener - ⅓ cup
  • 2 teaspoon vanilla extract
  • 1 large egg
  • 1 ¼ cup almond flour
  • ¾ cup coconut flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 7 oz dark chocolate chips - or chopped chocolate

    I love your recipes and the videos are so well done. I'm making your chocolate gooey cake today! I was intrigued about the use of the IMO Syrup in this cookie recipe, so I did a little research online and found this educational video by Dr. Berg. Search: Is IMO Syrup (Fiber) Keto Friendly: Isomaltooligosaccharides? It is a 3-min video that explains the science behind how the body processes this syrup. In the end, he explains that he himself wrongly believed it was okay to use, but it can spike your blood sugars by 50 points. I hope to find an alternative.

      Hi, I would use less sweetener than syrup. Approximately 1/4 cup.
