Hi Tisa; I have a terrific low carb appetizer everybody goes nuts over. I make these mini peppers for our church supper once a month and have been told if I don't make the peppers that person will not come to the dinner. I make two forms of these peppers; one is sausage stuffed mini pepper and the other is a taco stuffed pepper. The recipe is as follows: one package of mini peppers of about 16 peppers, 8 oz of neufchatel cream cheese 8g; 16 mini peppers 16g; 1 lb hamburg 0g; 1 1/2 cups cheddar cheese 0g, 2 teaspoons taco seasoning 2g for total of 26 divided by 32 = 0.8g per pepper half. Cook hamburg til browned, add taco seasoning & mix well. Add cream cheese in chunks til they melt then add shredded cheddar cheese and mix well. Put spoon of hamburg mix into each pepper half; place on parchment lined cookie sheet and bake in 350 degree oven 20 minutes. Take out and let sit for a minute then serve. I also make Italian sausage peppers which is basically the same recipe minus the taco seasoning. One lb sausage; 8 oz neufchatel cream cheese, 1 1/2 cups cheddar cheese, and 1 package mini peppers, carbs will be a hair less. Cook sausage til browned; add cream cheese & cheddar cheese and mix well. Spoon into pepper halves and bake like taco peppers. I have used bulk sausage, breakfast sausage but favorite is Italian sausage and favorite cheese is Pepperjack cheese. If you like spicy you can use half sweet sausage and half hot sausage or use hot peppers. You could also use regular green or red peppers but would bake longer. Haven't tried that yet. Enjoy, Debbie
