Equipment
- 1 Small saucepan For heating the mixture
- 1 Whisk To dissolve and mix sweetener
- 1 Measuring cup For water and sweetener
- 1 Glass jar For storing finished syrup
Ingredients
- 1 cup water
- 1 cup allulose - or other keto sweetener
- ⅛ teaspoon xanthan gum - Optional, for thickening
Instructions
- Add the water and sweetener to a small saucepan over low heat
- Whisk continuously until the sweetener fully dissolves and the mixture begins to simmer.
- (Optional) Sprinkle in xanthan gum, whisking constantly to avoid clumps.
- Remove from heat and let the syrup cool completely.
- Pour into a glass jar or bottle and refrigerate. Use as needed.

16.98g NET CARBS per tablespoon is too much for keto diet. Could it be significantly less because allulose is not metabolized? I have seen reports of 70% excreted unchanged in urine. If 70% is subtracted, that would be around 5g Net Carbs per tablespoon which is OK for special treats.
