Looking for an easy sugar-free simple syrup that won’t crystallize or spike your blood sugar?

This keto simple syrup takes just 5 minutes, uses only 3 ingredients, and works perfectly in cocktails, coffee, teas, and more. Unlike many low-carb versions, this one stays smooth and pourable — no gritty texture, no weird aftertaste. All you need is water, a keto-friendly sweetener like allulose, and a pinch of xanthan gum if you want it thick. That's it.

Whether you're mixing margaritas or sweetening lemonade, this syrup gives you all the sweetness without the sugar.

Equipment

  • 1 Small saucepan For heating the mixture
  • 1 Whisk To dissolve and mix sweetener
  • 1 Measuring cup For water and sweetener
  • 1 Glass jar For storing finished syrup

Ingredients
  

  • 1 cup water
  • 1 cup allulose - or other keto sweetener
  • ⅛ teaspoon xanthan gum - Optional, for thickening
Prevent your screen from going dark

Instructions
 

  • Add the water and sweetener to a small saucepan over low heat
  • Whisk continuously until the sweetener fully dissolves and the mixture begins to simmer.
  • (Optional) Sprinkle in xanthan gum, whisking constantly to avoid clumps.
  • Remove from heat and let the syrup cool completely.
  • Pour into a glass jar or bottle and refrigerate. Use as needed.

Notes

  • Sweetener tips: Allulose is ideal because it stays smooth and doesn’t crystallize. Avoid erythritol for syrups — it often hardens after cooling.
  • Xanthan gum: Optional but helpful if you want a thicker, syrupy consistency. Add it gradually while whisking to avoid clumps.
  • Flavor options: Try adding vanilla, cinnamon stick, mint, or citrus zest for extra flavor. Always add flavoring after cooling for best results.
  • Storage: Keeps in the fridge for up to 6 months. Shake before each use.

    Thank you for all of the effort you share with us. The recipes are delicious and really help to maintain a healthier lifestyle with dieting.
    16.98g NET CARBS per tablespoon is too much for keto diet. Could it be significantly less because allulose is not metabolized? I have seen reports of 70% excreted unchanged in urine. If 70% is subtracted, that would be around 5g Net Carbs per tablespoon which is OK for special treats.
