Equipment

  • 1 Mixing bowl
  • 1 Hand mixer (od stand mixer)
  • 1 Spatula
  • 1 Freezer-safe container with lid

Ingredients
  

  • 2 cups heavy whiping cream
  • 3 tablespoon powdered erythritol (or monk fruit blend) - or simmilar keto friendly sweetener
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoon unsweetened cocoa powder - (optional)
  • ¼ cup mashed berries - (optional for flavor variations)
Prevent your screen from going dark

Instructions
 

  • In a large mixing bowl, whip the heavy whipping cream using a hand mixer until soft peaks form (about 3–5 minutes).
  • Gently fold in the powdered erythritol, vanilla extract, and salt.
  • If using cocoa powder or berries, fold them in now until fully combined.
  • Transfer the mixture into a freezer-safe container and smooth the top with a spatula.
  • Cover the container with a lid and freeze for 4–6 hours, or overnight, until firm.
  • Let the ice cream sit at room temperature for 10–15 minutes before scooping for the creamiest texture.

Notes

Tips for Creamier Texture
  • Use powdered sweetener to avoid graininess.
  • Add a splash of vodka (1 tbsp) to prevent the ice cream from freezing too hard.
  • Stir halfway through freezing for better texture if not using an ice cream maker.
