Equipment
- 1 Mixing bowl
- 1 Hand mixer (od stand mixer)
- 1 Spatula
- 1 Freezer-safe container with lid
Ingredients
- 2 cups heavy whiping cream
- 3 tablespoon powdered erythritol (or monk fruit blend) - or simmilar keto friendly sweetener
- 1 teaspoon vanilla extract
- 1 pinch salt
- 2 tablespoon unsweetened cocoa powder - (optional)
- ¼ cup mashed berries - (optional for flavor variations)
Instructions
- In a large mixing bowl, whip the heavy whipping cream using a hand mixer until soft peaks form (about 3–5 minutes).
- Gently fold in the powdered erythritol, vanilla extract, and salt.
- If using cocoa powder or berries, fold them in now until fully combined.
- Transfer the mixture into a freezer-safe container and smooth the top with a spatula.
- Cover the container with a lid and freeze for 4–6 hours, or overnight, until firm.
- Let the ice cream sit at room temperature for 10–15 minutes before scooping for the creamiest texture.
Notes
Tips for Creamier Texture
- Use powdered sweetener to avoid graininess.
- Add a splash of vodka (1 tbsp) to prevent the ice cream from freezing too hard.
- Stir halfway through freezing for better texture if not using an ice cream maker.
