It's that time of the year when I would love to give out a recipe for green keto beer! I never had a green beer before going keto, have you? Anyways, I can imagine that some of you like to celebrate March 17th, so I'm inviting you to try the St Patrick's Day Keto Cupcakes. No grains, no artificial colors. Only a couple of tricks to get some green color into perfectly guilt-free keto cupcakes.
St Patrick's Day Keto Cupcakes for any occasion
I love cupcakes. They are a totally different thing from muffins, yet, take away the frosting and you get a muffin. It is the frosting that gives the "muffin" that magical enhancement. When the spongy and cakey base combines with the creamy and fresh topping, the combination of the two is a rave party for the tongue and the brain!
I think we should be making keto cupcakes more often. The frosting takes some additional time, though. I find myself having too little patience for making those beautiful, classy cupcakes that would fit in a display window of a pastry shop. Well, a part of the problem lies in not really having many options for keto-friendly decoration. Every decoration you can buy in stores is made of sugar and artificial colors. I'd need to quick my day job and Ph.D. studies to make my own.
Therefore, St Patrick's Day Keto Cupcakes are focusing on being slightly green without any artificial colors and sugar-filled stuff. If you have a keto-friendly solution for decoration, lucky you! Now, go ahead and show us!
How to make St Patrick's Keto Cupcakes
- Preheat the oven to 350°F (180°C) and line a cupcake pan with paper liners (possibly green);
- In a small bowl, whisk together almond flour, coconut flour, baking powder, and salt;
- In a medium bowl, using an electric mixer, mix together creamy sunbutter, softened butter, sweetener, and baking soda;
- Beat in the eggs, one at a time, then add vanilla and heavy cream (or almond milk) and whisk thoroughly;
- Using a rubber spatula, stir in the flour mixture until just combined;
- Spoon the batter into 12 paper liners. Bake immediately for 20 minutes or until a toothpick inserted into the center comes out clean.
- Remove the cupcakes from the pan and let them cool down on a cooling rack.
- For the frosting, beat together softened butter, cream cheese, powdered sweetener, matcha powder, and vanilla;
- Pipe the frosting on the cooled cupcakes. Decorate with more matcha powder.
NOTES:
- Because sunbutter reacts with baking soda, the inside of the cupcakes will turn greenish when cooled. There's nothing wrong with the cupcakes! This is an intentional use of sunbutter for making St Patrick's Day Keto Cupcakes rather than just any type of Keto Cupcakes.
- You can make homemade sunbutter.
- These Keto Cupcakes are best served fresh and frosted just before serving.
- Deep down, I do not like using frosting recipes where you're supposed to mix butter and sweetener that is twice the amount of butter. That is just too much erythritol or any other sweetener if you ask me. Thus, the frosting might turn a bit runnier than we'd want.
How to make homemade sunbutter
I've had a short sunbutter recipe up for ages now. But, basically, this is what you need to do:
- Take a bag of sunflower seeds and slightly roast them in the oven at 300°F (150°C) for around 40 minutes. Make sure they don't burn. Roasted, sunflower seeds get a tad nicer flavor;
- Pulse the seeds in a food processor for a few minutes until almost creamy. It takes patience.
- Add a dash of salt and a Tbsp. or so of coconut oil and pulse. This final step makes the sunbutter creamy.
Sunbutter Keto Cupcakes?
Yes. In general, I wouldn't indulge in sunbutter or sunflower seeds every day because of the high presence of Omega 6. But it is good to keep in mind that sunbutter is a great substitution for those with nut allergies! So if you can't have peanut butter (which I wouldn't indulge in too often, either) because of an allergy, sunbutter can be a fun alternative!
On the other hand, if you have no intention of making Keto Cupcakes for St Patrick's Day, or just don't care about the greenish color that sunbutter offers, you can easily use any other nut butter. There's no-one that wants to keep you away from baking peanut butter keto cupcakes using this very recipe.

- ¾ cup almond flour
- 2 tablespoon coconut flour
- ¼ teaspoon baking powder
- 1 dash salt
- ½ cup sunbutter - creamy, room temperature

- 1 tsp. baking soda
- 1 large egg - room temperature
- ¼ cup heavy cream - or almond milk
- 1 teaspoon vanilla extract
Frosting
- 3 oz cream cheese - room temperature
- 3 tablespoon butter - softened
- 6 tablespoon powdered sweetener
- 1 teaspoon vanilla extract
- 1 teaspoon matcha powder
